Beef and vegetable soup

This is gonna be a good one.

1 lb beef eye of round steak cut in to 1/2 inch cubes.

1 quart beef broth (you can get it at the supermarket) 1 quart water

1 potato sliced and quartered

3 stalks celery sliced in to 1/2 slices

3 cloves garlic chopped finely

30 baby carrots cut in to three sections

1/2 onion diced

1 tbsp rosemary

1 tsp oregano

1 bay leaf crushed

1 tbsp salt

1 tbsp pepper

It is 5:30 pm now, so I am going to leave the crock pot on high so that I can ring in the new year with this wonderful concoction.

Here is a photo of my cutting knife and my cutting board (a piece of half inch plywood). Below that is a photo of the beginning of the soup. I had not put in the beef yet.

Rudy, you can leave the bay leaf whole and pull it out when cooked.

Stuart, I know that's what most people do with bay leaves. I don't mind crushing it up. It really doesn't show up in the end product.

I had a bowl last night around midnight. It is very good. I may have put in too much Rosemary. I don't mind though. I get fresh Rosemary from a friend's bush. I just strip the "leaves" from the stalk. I should get another three servings out of this pot. I am going to have some more this morning.

It is 8:30 AM and it is 22 degrees outside. Luckily, the sun is shining, so the bus will get warm soon. I will wear my Carhartt overalls to walk the dogs this morning, and then I will have some good soup.

It is now 2010, and the computer did not crash. It also did not crash at Y2K.

This soup is fantastic. It is spicy. I am glad that I did not put more than a tablespoon of pepper. Here is a photo.

I don't even need a woman to fatten me up. It's that home cooked food that is doing it to me. My pants are starting not to fit. OH NO! Now I have to go to Goodwill and buy another mountain of clothes.

Well, my weight will be something that will always be with me. I think what is happening is that I eat giant bowls of this stuff. I had a can of Progresso Lentil soup the other day, and I noticed that it was about half the amount of servings I dish out for myself with the crock pot stuff. Moderation may be the key maintaining slimness.
