rudy thank you for posting the pics, the steaks came out ok , no left overs. on this batch i used apple wood. steve

I’ve been jonesing for some smoked meat. I think this weekend I will smoke a big roast. I usually do pork butts, but this time I think I will try beef. I’m going to marinade it for a couple days and do it low and slow with some hickory.

I'll do that, Steve. I'll take you some juicy pictures.

I hadn't had much luck with beef until recently. I learned it just can't be rushed. I did a killer prime rib for Christmas dinner that was a huge hit. Now, I'm wanting to give it another go, but with a cheaper cut of meat!

Pork is pretty easy. I've had good luck with ribs, butts and shoulders. Beef has given me issues, though. Hopefully, I have it figured out, now.

Steve,

With your deer steaks; did you marinade them, or use any rubs? Or, did you just salt and pepper?

You guys are making me crazy with these pictures and smells coming over the internet! I'm so hungry for a good slow cooked Elk steak I could almost go out and poach one!!

mark .the last batch i just used a little salt and pepper, i dont use any thing else , i like the smoke flavor and gamey flavor together
